Season lamb fillets and sear in a hot pan. Take out and spread the top of the fillets with a mixture of Bill’s Beetroot Marmalade and crumbled fetta. Wrap in filo pastry, brush with butter and bake in a hot oven until pastry is brown. Serve with new potatoes and minted peas.

Rocket and goats’ cheese salad

Rocket and goats’ cheese salad

Toss some rocket leaves in a bowl with either goats’ cheese or fetta. Make a dressing by mixing your choice of oil and vinegar with a large spoon of Bill’s Beetroot Marmalade. Pour onto the salad and serve with toasted ciabatta for a yummy lunch.
